We’ve made it seven months breastfeeding and even though Luna enjoys a few fruits and avocado she’s still eating about 90% breast milk. At this point in our nursing journey I’m noticing more and more that food is everything when your supplying the nutrients for two people. If my body isn’t getting enough of something it tells me (by making me cranky or super emotional)! Making sure I have enough snacks to eat is crucial for my mood and keeping my supply strong for my sweet baby is a non-negotiable since we are still aren’t using bottles at all. When I start to get hangry these banana oat muffins are another one of my go-to’s! Packed with tons of supply boosting goodness and real food ingredients they get gobbled up quickly. Then BAM! I’m feeling good again. THANK GOODNESS!
Coconut sugar, coconut flour, oats, flax seeds, chai seeds, fennel oil, copaiba oil…those are some seriously amazing ingredients for you momma! These muffins are the perfect support for your supply whether you’re trying to establish or maintain but before I hand over the recipe I want to chat about cooking with essential oils. Several Young Living oils are safe to cook with but always remember that not all oils
are created equally!! This recipe is only to be made using Young Living Essential Oils- I personally wouldn’t trust any other essential oil company. At Young Living we are SO PROUD of our Vitality Line and have

Essential oils that have passed the FDA requirements for suggested internal use- so you can feel 100% confident serving these up to your family and friends! Ingesting essential oils is a touchy subject, too much of a good thing can be bad for you…like water poisoning for example! Safety is import when using oils so always make sure to read labels, follow recommended usage on the label, and of course always do what you feel is safe and comfortable for you and your family!
Now on to the goodies!
What You’ll Need//
1 ½ cups flour
1 ¼ cups unsweetened almond milk
½ cup coconut sugar, packed
3 mashed ripe bananas
1 large egg
2 tablespoons local honey
1 tablespoon coconut oil
1 teaspoon pure vanilla extract
¼ cup coconut flour
1 teaspoon baking powder
½ teaspoon kosher salt
1 tsp cinnamon
¾ cup mixture of flax seeds, rolled oats, and chai seeds
1 drop copabia essential oil
1 drop fennel essential oil
(Vitamin D optional)
Crunchy Oat Topping:
⅓ cup oats
1 tablespoon melted butter
1 tablespoon raw honey or real maple syrup
1 teaspoon coconut sugar
Preheat oven to 325 degrees Fahrenheit and grease your muffin tin if necessary! In a large bowl, beat the coconut oil and honey together with a whisk. Add egg and beat well. Mix in the mashed bananas and milk, followed by the baking soda, vanilla extract, essential oils, salt, and cinnamon. Now for the dry ingredients! Add both flours and your oat and seed mix to the bowl and combine with a large spoon. If you’d like to add any additional mix-ins, like nuts, chocolate or dried fruit, now’s the time to fold them in! Then let’s make the topping! This is definitely my favorite part of the whole muffin! Stir together your ingredients into a small bowl until well combined and set aside until your ready to top! Divide the batter evenly between the 11 muffin cups, filling each cup about two-thirds full. Sprinkle the tops of the muffins with a small amount of your crunch oat topping. Bake muffins for 23 to 25 minutes, or until a toothpick inserted into a muffin comes out clean. Place the muffin tin on a cooling rack to cool. You might need to run a butter knife along the outer edge of the muffins to loosen them from the pan. You can enjoy these warm on their own or with a little nut butter spread over the top for a little bit o protein too. Muffins are great because you can pack so much punch into such a tasty little treat. I love whipping these up for breakfast when I feel like I could use some support or as a snack during the day when my nursing hunger strikes!
